First Fermentation of 2025

I started some sauerkraut about 2 days ago. By this point last year, I had made 3 batches of sauerkraut, but I also got bit by mosquitos in March last year... soooooo... It was also 70F+ the first week of January last year, so things were quite weird last year.

The sauerkraut is fermenting! Maybe not as quickly as I'd like, as it still does get decently cold at night, so the average temperature during the day is probably about 40-45F instead of 55F+, but the fermentation is certainly going.

I'm excited for sauerkraut after dealing with nearly a dozen polar vortexes this year, each bringing the temperature down to around -30F to -40F and bringing a lot of wind...

In 2022, we hit a record amount of snowfall, but never more than about 2 inches at a time. We hit a record because we had so many darn days of snow... This particular year we had the same thing but with cold temperatures and polar vortexes. Sure, we had some hot temperatures sprinkled in the Winter as well between the ~12 polar vortexes, but I suspect this Winter will be on record in my area for coldest Winter due to how often we hit around -30F to -40F from the polar vortexes.

Due to the temperatures, it might take about 3 weeks to ferment this sauerkraut instead of about 1 and a half weeks, but I am absolutely willing to wait that long. I already had to wait this long already, so what is 3 more weeks?

A friend of mine likes growing raddishes, so I'm excited to try fermented radishes on things like tacos and salads. If I find a cheap enough half dozen to a dozen of eggs near me, I'd like to try them in an egg salad as well.

Eggs? In this economy?
